Spanish Rice

This is a recipe that I love because you can make it whether your cupboards are bare or full, and it’s so, so easy! It’s delicious, warming, and really easy to make. You can make it with any veggies you like, but in this picture we have baked yams and grilled asparagus. 

-1 cup brown rice

-1 ts olive oil (optional for cooking rice)

-2 leaves swiss chard, finely chopped

-1/2 red onion, finely chopped

-1 ts tandoori mix

-1/2 ts oregano

-1/4 ts salt

-2 tbs poppy seeds

Cook rice according to package directions. While rice is cooking, in medium bowl mix all remaining ingredients except oil. Set aside. Once rice is cooked, add in spice mixture and enjoy!
